Oysters and NOWACO
Oysters are culinary high points. There are about a hundred species of oysters in mild and warm seas throughout the world. Edible ones are divided into two groups. European oysters (Ostrea edulis and Ostrea angulata) are round and flat. Oysters are hermaphrodites; they fertilize their own eggs and the larvae are released into the water, where they float about freely. Oysters lay up to three million larvae a year. It takes between three and six years for oysters to reach market size.
NOWACO’s oysters are delivered from oyster parks in France and Holland three times a week. We place a strong emphasis on quality and give preference to traditional family-owned oyster businesses. Our oysters are packed in wooden boxes or baskets and surrounded with seaweed to keep them fresh, so that they can be brought live to the diner’s table.
